references have been many, as have its uses. |
Carob
Powder ('charouposkoni')
Carob pods are roasted and finely ground to produce a powder
which may be used in baking and for hot or cold drinks. It has
a high natural sugar content and is a healthier, caffeine-free
alternative to coffee, chocolate and cocoa powder. |
Carob Honey ('charoupomelo')
Made from the ground seeds of the carob tree, it is not
as sweet as bee honey. Locally, it is enjoyed with bread,
yoghurt or goat's cheese and in milkshakes. It is also
used extensively in baking. |

Carob Toffee ('pastelli')
Made from pure concentrated
carob honey, it is kneaded and stretched until it acquires its
golden colour. It may be covered with roasted sesame seeds,
has a bittersweet taste and is chewy in texture. |
Nut
Brittle ('pastellaki')
A crispy combination of nuts and honey, it may be made with
sesame, almonds or peanuts and contains both carob and bee honey.
Its delicious sweet taste and nutritional value make it a popular
healthy snack. |
